Easy Taco Nacho Salad

Taco Nacho

Tacos have always been a family favorite in my household. Using the traditional taco shells is all we knew when i was growing up. Today restaurants like Taco Bell are coming up with some unique shells, like Doritos cheesy shells. Anyway instead of going out to buy nachos or tacos make "Easy Taco Nachos". Instead of the usual shell use corn tortilla chips and all your favorite toppings.


1 Pound of ground beef
1 Pack taco season any brand
1 Large tomato diced
Lettuce chopped
Mexican blend shredded cheese
Sour cream
Nacho peppers

Brown the ground beef until done, drain fat and add a little water. Adding water will keep the beef moist.
Add in your season packet, stir until beef is coated. Next put your corn tortilla chips in a plate and start adding your favorite toppings.

Optional ingredients such as guacamole or Doritos

Here is the finished result.

I love adding Louisiana hot sauce to my meat instead of salsa, it gives this dish a kick if you're a spice lover.

Childhood bring back so many memories for me, especially the fun memories. Those are the time when you have no worries and fun and sweets were all that mattered. I remember getting so excited to go pick Blackberries aka Dewberries with my cousins. We gather our little buckets or bags and head on down the railroad track in my home town Navasota. Dewberries was a really good treat in the summer time, Big , juicy little fruits we would throw into the bucket and sometimes pick off the vine and put straight into our mouths lol! We would spend hours on the track just to get enough for our mothers to make dewberry cobbler. I would stand in the kitchen while my mother boil them, then add sugar and make dumplings. Brings back great memories.

In this post I will show you how easy it is to make Blackberry Cobbler that your family will love. You can follow how I do mine or you can simply make your own in your own way

Turn oven to 350-Serves 6

  • 2 packs regular pie crust- You will need 3 to make dumplings and one for covering the cobbler
  • 2 cans of Lucky Leaf Blackberry pie filling
  • 1 1/2 sugar
  • 1 cup of water
 Optional Ingredients
 (Ready whip or Vanilla Ice Cream)

Pour 2 cans of the pie filling into a glass baking dish . Add the sugar and water and stir until blended. Start cutting up 3 pie crust into dumpling squares. Add dumplings to the pie filling mixture and stir, top with the last pie crust. Bake 30 to 35 mins. Sit and let cool if you like or serve hot. Top with ready whip or ice cream

Famous Homemade Chocolate Chip Cookies

Homemade Cookies

Good morning everyone, I had a blast last night baking my first ever made chocolate chip cookies and I tell you they were so delicious. When I was done baking them I had to have a test subject Aka "Mikey" my son. Well, his name is not Mikey, but if you ever remembered that Life cereal commercial where the kids hand that bowl of cereal over to the other kid to try out first it out.

 He ate one, woo hoo! Mikey Likes it! (Laughing at this point) and so I tried it and my mouth was filled with happiness. Everyone loved the cookies and my husband said they were better than his and I must agree. I had limited ingredients and they turned out excellent and I didn't even need baking soda, brown sugar or vanilla extract. I'm going to share this recipe with you and if you decide to make them for your family I would love to hear from you how they turned out.

Chocolate Chip Cookies


1. Stick of Margarine Butter (Recommended Imperial)
1. Large Egg
3. 3/4 cups of sugar, but if you don't have that measuring cup, use a 1/4 cup 3 times
1 and 1/4 cups of flour do not pack it.
1/4 Teaspoon of salt
I cup of Chocolate Chips Unsweetened
 Preheat oven to 350


In a mixing bowl, add your one stick of butter and your sugar and start to blend it with your mixer, if you don't have a mixer a wooden spoon will do. Blend until the mixture is nice and fluffy, then add your egg and blend a little more. Then start adding your flour and salt, but be careful not to over blend the flour in the mixture.

Start by dropping the cookies on an ungreased cookie sheet by the tablespoon, making sure they are about an inch or so apart. I made 9 cookies per sheet. Place them in the over for about 9-12 minutes. They will not get really Brown like other chocolate chip cookies, because of some missing ingredients, but once the edges start getting a light golden Brown they are ready to take out.

Set aside and let them cool down a few seconds and use a metal spatula to pick them up and put into a plate or cooling rack.

Beef- And- Biscuit Casserole

Yes! This southern girl loves to cook when in the mood. Today's post is "Beef-And-Biscuit Casserole" and I must say this recipe is so delicious and simple to make. After trying this biscuit casserole when my mother made it, I fell in love. So today while I was at her house she said she wanted to make some and the idea popped in my head to make some for dinner at my house. Anyway ya'll I made two pans because I have a big family and they can eat lol! Here are the ingredients needed for a 4-6 serving size.


  • 1 1/4 pounds ground beef
  • 1/2 cup chopped onion
  • 1 (8 ounce) can tomato sauce
  • 1/4 cup diced green chilies
  • 1 egg
  • 2 teaspoons chili powder
  • 1/2 cup sour cream
  • 1 1/2 cups (6 ounces) shredded cheese divided
  • 1 (10 ounce) can refrigerated buttermilk flaky biscuits

Combine beef and onion in a large skillet. Cook until meat is browned, stirring to crumble meat. Drain off pan drippings.

 Stir in tomato sauce, chilies, and chili powder. You can add salt to taste even though this recipe doesn't require salt.

Cook over low heat, uncovered, 10 minutes, stirring occasionally; remove from heat.

Beat egg in a small bowl, stir in sour cream and 1/2 cup cheese. Add to meat mixture, and mix well; set aside

Separate each biscuit into two halves, making 20 biscuits rounds; Press 10 rounds in an un-greased 9-inch square baking dish. Spread meat over biscuit layers.

  Arrange remaining biscuit rounds over meat mixture., Sprinkle with remaining 1 cup of cheese. Bake uncovered at 375 degrees for 25 to 30 mintues or until biscuits are golden.

As you can see I used bigger pans and I wrapped them with aluminum foil. I used this because my pans are old and I didn't have an appropriate baking dish. I really hope you guys enjoy this recipe if you decide to make it. Also you can probably alter this dish a bit, like a breakfast using pan sausage.
