Delicious Oatmeal Oven Fried Chicken
I love fried chicken! I grew up on it. My earliest memory was when I was a preteen, my mother would make it sometimes on weekends with beans, cornbread and buttered rice. Talkin about some good southern eating lol!. Chicken was always the last thing left in the freezer after all other meats was gone. I say it was the most cheap than other meat and my mother would make it all types of ways, but fried was my favorite. After so many years eating it fried in vegetable oil has made my cholesterol a bit high, so lately I went in search of a healthier version. Oatmeal is a great source of vitamins, great for your heart and I also love eating it raw just because it so good and the texture. Oatmeal is a great benefit and health food.
Anyway I found a recipe online for oven frying it. It requires milk and other ingredients that I tried, but the flavor wasn't as flavorful so I put my own little twist on it. You have to ground the oatmeal down a bit into a grinder, which I did. I added some of the original ingredients such as the cummin and chili powder into the grounded oatmeal. I rinse my chicken, then lightly season with chicken rub, then roll it into the mixture, place it on a pan sprayed with cooking spray.
